a birthday cake named Floydd

Here are pictures I promised from Mom and I's semi-successful attempt at making a pig cake. This year I really wanted a themed birthday cake, instead of the normal 9x13 pan cake. Don't get me wrong. Those are wonderful. But it's all in the process of making it look cool that really gets me. And to be honest, my older sisters have been kicking my butt these past years making ÜBER awesome cakes for their daughters. So I wanted in on the fun.

Mom and I ran into a few difficulties, but also had a few successes. I love cake, but I also can be a health nut. If I didn't do something drastic, I'd eat the whole cake by myself before we even had time to shape it. So I decided to make a "healthy" cake by substituting applesauce for the oils and butter. It turned out pretty good, but Mom didn't like it. We stuck the cake in the freezer for easier cutting, which ended up being a very nice trick. Next, Mom swore by homemade frosting, but I've never been a big fan. But she told me it would taste much better. We made it, but I wasn't sold. Even after we put almond in it. I love chocolate frosting, what can I say? Mom's known that since my first birthday. But the problem arose of how, exactly, to make the pig pink if the frosting was chocolate. Mom suggested coconut, and dying it pink. We went to Walmart and bought new food coloring and got hot pink for the pig. We dyed the coconut (very easy) and while Mom frantically frosted the cake, I quickly covered Floydd (by this time he had a name) with pink coconut. (The chocolate frosting was drying out very quickly!) I thought the cake turned out pretty good, regardless of the troubles we had. Apple-chocolate-almond-coconut cake doesn't taste bad.

Brian's first statement: "Didn't she already name something Floydd?" (The pig in the living room, right?)
Anyway, great job! I'm glad that everything turned out great! As far as homemade frosting goes, if you try MY recipe, you will think it is the best stuff to frost with, and it actually tastes pretty good! So, remind me before your class and I'll get you a copy of the recipe!

I name every pig Floydd.
I'll have to try your recipe. As far as the class goes, thew only schedule they have up on their website is for June, and they hold the class on Saturdays from 1-3. I don't think Saturdays would be a good idea, even during the summer. So I'll plan on taking it during the fall I suppose. It's $20 plus supplies for 4 classes I think.

I get it Pink Floyd!!! Ha Ha Ha!!! we love the cake it looks yummy, but too cute to eat. Logan wants to put a request for a "cool cake" for her birthday, she wants something Über-extravagant, she was thinking something along the lines of a Mansion and furniture, perhaps a pool. We love you and can't wait to see you next week or so.

So I think it was a great success for being your first healthy/homemade/pig cake. As the years go on it gets easier. I am going to "Captain Alberts" (my favorite store, it is has all the pans and supplies about baking and decorating cakes and cupcakes and lolly pops and... well its great!) We are going to decide on what I will make for Elaena's b-day. She will get to pick out what she wants (last year she picked out a princess castle pan) and then from there I will make the cakes and fillings and frosting healthy (unless I decide to use fondant which I did last year and there isn't much of healthy with that!) Anyways great job!!

I hereby attest that the "pig cake" tasted fine. It has been 48hrs and I'm still kickin'. It looked much better in person.
